Taco Rice

Kate from Picklebums recently asked for a meal idea that all our children liked. 

As someone commented “One meal? That all the children like?” Which echoed my thoughts exactly. But then I got thinking. There is the usual, mince and pasta (bolognaise), home made chicken nuggets and pasta, but definitely the winner of them all- Taco Rice. 


Taco Rice is a Japanese take of a classic Mexican dish and it is just delicious!

Ingredients:

For the mince:

500g mince
1 400g tin of chopped tomatoes
1 onion
3 cloves garlic (crushed)
1 tbs taco seasoning
1tsp chilli powder (optional)
1 400g tin black beans (I don’t always include this, as my children don’t like them!)
Salt and pepper to taste

For the layers:

Cooked rice (enough for 4 people)
Shredded lettuce
1 Pepper (chopped)
Tinned sweetcorn
Salsa
Chopped avocado ( into cubes)
Taco Crisps
Cheddar cheese
Poached egg


Method:

In a saucepan, brown the mince.

Drain off the excess fat, and add the rest of the ingredients for the mince to the pan. 

Cook for 20-30 minutes until cooked through. (Adding water or stock if necessary.)

To Create:

Serve up a portion of rice. 

Add lettuce on top and then the mince.

Continue topping with whichever extras take your fancy- sweetcorn, salsa, avo

Lastly add the taco crisps and cheddar.

To make it a truly authentic Japanese version- add the poached egg last.
